Ingredients:
2 teaspoons olive oil or butter
2 cups chopped onions
2 teaspoons flour
4 cups of vegetable broth
3 cups pumpkin puree
1 clove of garlic (minced)
1/2 teaspoon ground cumin
1 teaspoon salt
1 teaspoon pepper
4 tablespoons coconut milk (optional)
dash of nutmeg (optional)
Directions:
Coat pan with olive oil or butter. Add chopped onions and stir for 6 minutes.
Add flour and cook for 2 minutes. Stir in pumpkin, vegetable broth, coconut milk, garlic, salt, pepper, cumin. Cook for 15-20 minutes.
Top bowls of soup with nutmeg and serve.
