Grits 'n' Eggs

Ingredients:

2 cups hot cooked grits :

  • 1 cup quick grits

  • 1 teaspoon (tsp) salt

  • 2 Tablespoons (TBSP) grated cheese

  • 1 teaspoon garlic powder

  • chives

6 eggs - 1 egg per person

Instructions for Grits:

(per package directions)

  1. In a heavy saucepan, slowly stir grits and salt into briskly boiling water. Reduce heat to medium-low. Cook 5-7 minutes or until thickened stirring occasionally

  2. Remove from heat, place grits in a serving bowl and add cheese, garlic powder, and pepper

Instructions for Eggs - over hard:

Heat stove to medium. Spray a small amount of cooking spray on the griddle. Break egg onto the griddle. Use Spatula to pierce yolk. When “set” enough to turn, turn the egg over (about 2 minutes). Do not overcook. When just about done, remove from griddle to serving plate (not individual plates).
