Ingredients:
2 cups Masa harina (Corn flour)
1 ½ cup water
*optional*: ¼ teaspoon (tsp) baking soda, for added “lift”
(You can follow the directions on package)
Directions:
Step 1: Add 2 cups of Masa harina and pour into a large bowl.
Step 2: Add 1 ½ to 2 cups of very warm water (use microwave for 30 seconds)
Step 3: Press the masa dough as if you are kneading bread. Work the dough for several minutes. Adjust with more water, if needed. Preheat griddle or stove to 350 degrees or medium heat
Step 4: Divide the ball of dough in half, then divide each of those balls in half, continue until you have about 14 golf ball-sized pieces. Roll the pieces into ball shapes
Step 5 - Line the tortilla press with wax paper, take a dough ball and each student press a tortilla then places the tortilla on a hot griddle, or use hands or rolling pin.
Step 6 - Cook each tortilla on a preheated flat griddle for about 1 -2 minutes per side. Place finished tortillas on a plate, and cover with a clean tea towel until all tortillas have been prepared.
Step 7 - Enjoy your warm tortillas plain, with butter, salsa and perhaps beans. Refrigerate any leftovers for up to one week.
