Earth Day Energy Bites


1 banana, peeled

1/4 cup sunflower butter

1/4 cup honey

1 cup oats

1/3 cup puffed cereal (rice, millet, etc.)

1 Tablespoon seeds (hemp, flax, sunflower, chia, etc.)

*optional* 1 Tablespoon mini chocolate chips


DIRECTIONS

  1. In a bowl, add banana and use a fork to mash.

  2. To the bowl, add in honey and sunflower butter. Mix to combine.

  3. Fold in oats, puffed cereal and seeds.

  4. Once incorporated, place mixture in the fridge or freezer for 1 hour until liquid is absorbed.

  5. Remove mixture from fridge or freezer. Scoop scant 1 Tablespoon of mixture and use your hands to form into a ball. Continue process until no mixture remains.

  6. Enjoy right away or keep in the fridge for up to a week.
