Ingredients:
2 cups cabbage, grated
½ cup purple cabbage, shredded
½ cup carrots, shredded
1 green onion, diced
1 teaspoon fresh parsley, chopped
Dressing:
*Note*- you can use plain yogurt, coconut yogurt hummus or pesto to replace sour cream or mayo
Ingredients:
1 Tablespoon cider vinegar
1 teaspoon fresh lemon juice
1-½ Tablespoon light mayonnaise
1 Tablespoon light sour cream
1 teaspoon Dijon mustard
2 teaspoon light brown sugar
1 teaspoon honey
Sea salt and fresh ground pepper to taste
Directions:
Toss the slaw vegetable ingredients together in a large bowl.
In a smaller bowl, combine the vinegar, lemon juice, mayonnaise, sour cream, Dijon, sugar, honey, celery salt, salt and pepper, to taste. Whisk until well combined. Pout the dressing over the salad and toss until evenly coated
