Pumpkin Pancakes

Ingredients:

Dry: Combine in a bowl

2 Cups flour

1/2 teaspoon salt

2 teaspoons baking powder

1 teaspoon cinnamon

1/4 teaspoon ginger and nutmeg


Wet: Combine in a bowl:

2 beaten eggs

1/4 cup oil or melted butter

1/3 cup water

1 1/2 cups buttermilk

1 cup pumpkin


Directions:

Lightly mix together the wet and dry ingredients. 1 +2 Spoon 1/4 cup on a hot griddle. Turn cake over when bubbles appear and start to pop (2-3 minutes). Top your pancake, when it is done, with butter and applesauce. Enjoy together!
